I did a little ad-hoc experiment locally and for me constructing the pixi.lock file takes about 1.5 minutes on main and 2 minutes on this PR. So I think it fine to add this one, but I agree with @keewis that we might not want to add any more.

This adds osx-64 (that's the old Intel mac) to the pixi config, so folks can use the pixi setup on older macs.
It seems to build the environment fine for me.
