Merge velora_delta to velora

• mergres velora_delta project into velora
• the rest of paraswap transactions moved to velora (v4 and v5)

PR Summary

Unifies Paraswap trade outputs under a single velora project label.

• Update project to velora in map_internal_to_dex macro (was velora_delta)
• Replace project = paraswap with velora in v4/v5 trades for ethereum, polygon, bnb, plus v5 trades for arbitrum, base, avalanche_c, fantom, optimism
• Affected files include chain-specific paraswap_v{4,5}_*_trades.sql; no logic changes beyond the project field
