Removed all occurences of OnlyOffice across all Charts based on Issue #21 .
Deployment with Collabora active worked fine, untested is the change in the Gateway part because I don't use it in my deployment.
(Ingress change is listed in the history but already reverted on this branch so that the pull request is only OnlyOffice related)
