Is there/will there be any documenation for how to use these maven plugins? I looked at some of the test projects, but I still don't have a clear idea of what each plugin is for, or how they should be used.

I will add some documentation within the next few days. The ocamlbuild plugin is not yet complete, which is arguably the most valuable one. The other basic ocaml tools are in decent shape though.
